September is the month

As you probably already know, Bridge to Wellness is no longer on Main Street in Simpsonville. I’ve relocated my business out of my home, and have set up my office downstairs. It’s a cozy little office, and I offer you complete privacy and the same quality services as before.

With the weather getting cooler, I’m in the mood for some comfort food. One of my favorites is Corn Chowder. My Webmaster, Nicky VanValkenburgh, shares this recipe below for my all-time favorite soup. Y’all know that homemade tastes so much better than out of a can. Almost all grocery stores have corn on the cob on sale now, sometimes 5 for a dollar. Check out this recipe, it’s really easy and delicious!

Corn Chowder Recipe

Ingredients (Cook these, then emulsify in blender)

1/2 large white onion, chopped (about 1 cup)
2 cloves garlic, minced
1 Leek (Chopped, white part only)
1/4 cup raw almonds (optional)
4 small red potatoes (or 1 small russet), quartered (peeling, optional)
Pink salt and ground black pepper
2 cups low sodium veggie broth (or two cups water with some bouillon cubes)

Part 2 Ingredients (Pour the forementioned mixture back into the saucepan, and then add these ingredients)

3 ears corn, kernels sliced off
2 cups unsweetened plain almond milk (or regular milk, if not vegan)


To a large saucepan over medium heat, add onion, and garlic and sauté for 3-4 minutes.
Add water, potato, season with a little salt and pepper, and cover to steam for 4-5 minutes. Check to see if the potatoes are soft. If your almonds have brown skin on them, peel the skin off so that they are plain white.

Place everything in the blender and emulsify to liquidy mush. Pour back into the saucepan.

Add the “Part 2 ingredients” — the corn and milk.

Transfer soup back to the saucepan and bring back to a simmer. Taste and adjust seasonings as needed. Cook for a few minutes minutes to warm and let thicken. The longer it simmers, the more flavorful it will be.

To serve, top with chopped green onion, and black pepper. Add a sprinkle of paprika for color.
